OUR WINEMAKING DENOMINATION OF ORIGIN “In developing our wines, the most important thing is to show through them the essence of the New World. To understand each valley with the characteristics of its climate and soils, which are part of the terroir of each variety. In this way, we manage to obtain a range, from fresh wines with fruity aromas and intense colours to more complex ones with great intensity, all of them highly characteristic of Chile. Vistamar offers a unique experience of daring to enjoy the simplicity of any occasion or company” Limarí / The first vines were planted in the middle of the 16th century, but it only recently became famous. It receives the influence of the “Camanchaca”, a cold mist that comes from the Pacific Ocean and slides towards the interior of the valley in the mornings, withdrawing as the sun rises. It receives less than 100 mm of rain per year, meaning that it is drip irrigation that allows the vines to prosper and form strong, deep roots in the mineral soils of the zone. This combination produces fresh wines with mineral overtones. Santiago Winery Irene Paiva / Winemaking Director Casablanca / The main geographical feature of this valley is the maritime influence of the Pacific Ocean, which produces a morning mist that acts as a temperature moderator. This characteristic favours the best possible development of the vineyard, and this demands special care if the desired ripening is to be achieved. The varieties that grow best in this zone are Chardonnay, Sauvignon Blanc and Pinot Noir. Maipo / This valley is the one with the greatest tradition in wine-production in Chile and is the most famous worldwide. It has a temperate climate, with a dry, hot summer. The zone is virtually frost-free and rainfall is concentrated between the months of April and September. The soils are alluvial in origin, very stony, with good drainage and average fertility. Its climatic conditions favour the development of red wines, mainly Cabernet Sauvignon. Cachapoal / This valley has a warm climate, with a high concentration of rainfall during the winter months, frosts in spring and high temperatures during the summer. The soils are highly fertile and suitable for agriculture. Its climatic conditions lend themselves a better growing for red grape varieties. Though most of the planting is given over to Cabernet Sauvignon, the main varieties identified with this valley are Merlot, Carmenère and Syrah. “LA MORALINA” PROJECT CACHAPOAL VALLEY The “La Moralina” estate is located in the Cachapoal Valley, in the river basin sector. It consists of 27 hectares of plantation at the foot of the hills and on the plain on the banks of the river Rigolemu and is situated in an area with favourable temperatures for the development and ripening of red varieties. PHYSICAL FEATURES OF THE ESTATE Temperature: The area is associated with a Mediterranean climate, with cold winters and hot summers, with average maximum temperatures reaching 28° C in January and 13° C in July. The minimums vary between 11° C and 4° C in those same months. During the period when the grapes are ripening, the afternoons are cooler due to the air currents that form in the river basin. The annual accumulation of degree/days is 1,500 (T° > 10° C), which is slightly cooler than most of the areas in the Central Valley. The hours of cold per year amount to 1,440 which is sufficient for winemaking grapes. Water: The estate has two sources of supply. The first corresponds to canal waters originating in the river Rigolemu, which are stored in a reservoir and then decanted. The second source of water corresponds to subterranean waters collected from water tables 70 metres deep and raised mechanically. Both, the river water and well water, flow into a common pool from which they are pumped to irrigate the vineyard. Soils: The estate has hillsides with soils that are alluvial/colluvial in origin, belonging to the Miravalle series (MIR), with plentiful stones and sand in the profile due to deposits of material in the depressions corresponding to the beds of old streams. In the lower part of the estate, with a flat to lightly sloping topography, (1 to 2° slopes), the soils are clayey to loamy-clay, belonging to the Los Lingues series (LGS). Vegetation: The estate and its surroundings display plentiful native flora, particularly trees like the Quillay, Boldo, Maitén, Litre and Hawthorn. As required by law, a plan of forest management authorised by CONAF (Forest National Corporation) was drawn up, saving the vegetation of the natural gorge that crosses the estate. WINERY Location: Rapel Valley, 122 kilometres south of Santiago. Reception lines: a selection table with two lines, connected to crushers and heat exchangers. Presses zone: pneumatic and hydraulic presses with a total capacity of 300 tons per day. Bottling line: two multi-format lines, capable to bottle 5,000 bottles per hour. Installed capacity: 12.2 million litres in stainless steel tanks and 800 thousand litres ageing in American and French oak barrels. Ageing capacity: ageing cellars with room for 1 million bottles. Laboratories: for analysis and microbiology, with state-of-the-art instruments to ensure the quality of our product. Certifications: ISO 9001:2000, HACCP, ISO 14001:2004, BRC (British Retail Consortium), IFS (International Food Standard), IMO, APL, OHSAS 18001, BPA and DLG. This allows us to have a wide range of aromas, flavours and textures at our disposal, and so create fresh, fruity wines with smooth, friendly tannins. The vinification is designed to enhance the typical characteristics of each variety. Winemaking Concept Sepia Reserva combines the expression of the variety inserted in a terroir with the subtlety and complexity provided by the aromas and flavours of its ageing in oak. Each variety is selected from a specific zone and vineyard, according to the characteristics of its climate and soil. The grapes are harvested manually at exactly the right point of ripeness. In the case of reds, this gives rise to wines with body, smooth texture and full fruit flavour. In whites it produces a fresh acidity and exuberant aromas of fruit, flowers and herbs. Each stage, from the selection of the grape, management of the vineyard, vinification techniques and ageing in different types of cask, has been worked out carefully and accurately in order to achieve quality of a high level, with unique identity and personality. Winemaking Concept Located at the north of Chile, the Limarí Valley presents high temperatures and few rains per year, allowing very healthy vineyards and dry harvests. The Moscatel grape used in this wine was harvested and then slowly dried by the solar rays at the north region of our country. In this way the aromas, flavours and sugars are concentrated, achieving a Late Harvest that is full of fruity intensity and freshness. The time in the bottle adds an elegant maturity, typical of the variety, to the fruity aromas.
