This traditional aroma and flavour are obtained thanks to the traditional system of drying over a wood hearth. The colour stability is the result of the high degree of carotene which accumulates in the pepper when it is grown in the microclimate of La Vera and in the drying process. The paprika pepper of “Pimentón de la Vera” arrived from America, and its crop was extended throughout the area of la Vera by the Hieronymite monks from the Monastery of Yuste in the 16th century, until it began to be produced by the families with great farming tradition in the Extremadura region, a fertile land with a large quantity of organic material, crystalline waters and a gentle climate.
